Cilantro skillet potatoes with 4 ingredients will give new meaning to potato salad!
I’m going to be honest…I don’t like cilantro, at all. But I like this potato salad! Not only is it super easy to make….umm hello, 4 ingredients, but even with all it’s simplicity, it’s light, bright and fresh! The olive oil keeps it light, buh-bye mayo! The crisp green cilantro keeps it bright and fresh!
You can choose to mash it up or cut it in cubes…You can make it with parsley or other greens. Whatever you do, it’s a great change from the usual heavy mayo based salads we’re used to seeing. And hey, its BBQ season, give it a shot! Or, it’s just a weeknight and this is a perfect side dish;-)
This simple flavorful potato dish is no standard potato salad! Whip it up in minutes!
- 5 small potatoes, chopped thinly
- 1/4 cup olive oil (or enough to coat pan)
- 1 cup cilantro, chopped
- 1/2 tsp salt
- pepper to taste
In a medium skillet over medium-high heat, add olive oil, potatoes and salt. Cook until tender about 10 minutes.
About 8 minutes into cooking, where the potatoes are almost tender, add in cilantro and a dash of pepper, Stir constantly so the cilantro cooks a bit to soften but stays bright in color.
Make this your own and add different herbs or veggies like parsley, or a squeeze of lemon juice!
