Our superstar classic gets a fall makeover right in time for pumpkin season! The results are in and the makeover was a great success! Yum!!
Onward and upward with pumpkin season!! So as I’ve said before, Nadia and I went for a day at the pumpkin patch, so this is our continuation of all the pumpkin goodness we brought home! We’ve played with so many options now, from Pumpkin Kibbeh, to Pumpkin Soup, to Candied Pumpkin, to Roasted Spiced Pumpkin Seeds.
Now it’s time to embrace our classic friend hummus and give him a festive holiday makeover! It’s really delicious! It has a warmth to it…you know, not temperature, but that cozy, comfort feeling, and I like it! The pumpkin gives it a softly sweet feeling. I by no means would call it a sweet recipe, but the pumpkin rounds out the savory tart flavor in a really nice way.
You can also take a sweeter approach if that’s what you like and add a bit of sugar and a dash of cinnamon, nutmeg, ginger or a little pumpkin spice mix! It’s so simple and easy to make, just like the classic, but the holiday twist makes it a little more fun! So give it a try and make it your own! Enjoy!
The ever so popular classic gets a fall makeover to celebrate Pumpkin Season!
- 15 ounce chickpeas, canned (reserve 1/4 cup garnish)
- 2/3 cup pumpkin puree, canned
- 1/4 cup tahini
- 3 tbsp lemon juice, fresh
- 1 clove garlic, pressed
- 1/2 tsp salt
In a blender or food processor, blend together all the ingredients except lemon juice. It will be dry and you will need to move it around with a spoon, add lemon juice to give you a little liquid to get things moving again. Add garlic and salt and blend until combined. Top with some chickpeas and olive oil and enjoy!
