Zucchini Dip made with 4 ingredients is so simple and delicious and its the perfect way to get your toddler to eat vegetables.
Years ago I went to a super cute Lebanese/Syrian cafe that served really good Middle Eastern food in a fun original way. There was fun art on the wall and great arabic calligraphy throughout the menu and of course Fayruz playing the background which of course won me over. It was there that I tasted this zucchini dip served with toasty pita bread and loved it so much that I did what any fat kid (me) would do; order another one, obviously. But the next day I knew I had to try to make it. So thats what I did and I just cannot believe how simple it is to make it! You can add more lemon if you like it with more of a lemon kick or more tahini if you want to tone down the acidity.
This taste good on its own with some pita chips or pita bread but will also elevate your sandwich game, or as a great dip for chicken shish tawook (see recipe here) instead of the usual (but amazing) garlic sauce.
- 4 green zucchini chopped
- 2 garlic pressed
- 3/4 teaspoon salt
- 2 tablespoon tahini
- 3 tablespoon lemon
Lightly sauté zucchini in olive oil on low heat covered for 10 min so they are soft and tender
mix all ingredients in blender or using hand blender
