Carrot salad with tahini honey dressing is a quick and healthy dish with ribbons of carrot covered in creamy, sweet, tangy goodness!
Carrots, the bunny’s favorite snack or is it? Either way, its one of ours! So, we’re presenting this carrot salad with tahini honey dressing !
Carrots are power house veggies and packed with some major vitamins and minerals. This special root vegetable is known to help improve eyesight, lower cholesterol, boost immunity and aid in digestive health, amongst many other things! Our little orange colored wonder is crunchy, sweet and actually rather filling. They’re also pretty awesome in the respect that they can be used in substitute of things like crackers, pretzels and bread. They go amazingly well with all kinds of dips….umm hummus and carrots! And they’re also great in soups and stews, or eaten au naturale! So, we decided that since they’re pretty perfect as is, let’s make them the star of their very own Carrot salad with tahini honey dressing!
So we decided to keep it pretty simple. While typically people tend to shred carrots for salads, I’m not a big fan. Although, I will agree the shorter strands can be easier to eat. But imagine this…eating your carrot salad like you would spaghetti! It’s really kinda fun! For that reason, because somehow aesthetics always matter to me, I used the veggie peeler tool to continuously slice off strip after strip of carrot ribbon until I was no longer able to safely grip the carrot. Then, I would eat the remaining stub.
After completing all the carrot prep, I wanted a rich and creamy dressing that had all the great qualities one loves for their salad dressing…some tang, some sweetness and some depth to its creaminess. So tahini is great for providing that! Plus, honey, lemon and olive oil are always winners.
To add some fun flavors and textures, I chose parsley, green onion, pistachios and dates, but really any variation of those type of ingredients would do wonderfully! Enjoy!
This carrot salad with tahini honey dressing is as beautiful as it is delicious! The ribbons of carrots and the creamy tahini honey dressing with a hint of sweetness make this a must try!
- 1 pound carrots, sliced in ribbons (about 4-6)
- 2 tbsp tahini
- 1 tbsp honey
- 2 tbsp lemon juice, fresh
- 2 tsp olive oil
- 1/2 tsp water (add more if needed to thin)
- 1/2 cup parsley, chopped
- 1/2 cup green onion, chopped
- 1/4 cup pistachio, finely chopped or ground
- 1/4 cup dates, chopped
Peel carrots with a carrot peeler. In a large bowl, continue to run the peeler along the length of the carrot as if to continue peeling, in order to create strips/ribbons of carrot. Do this until until you reach the center of the carrot and can no longer run the peeler. Leave center part of carrot aside or eat.
Combine tahini, honey, lemon, olive oil and water in a small bowl and mix well. Add enough water so that the dressing is still on the thicker side, but is pourable.
Pour dressing over carrot ribbons and toss to evenly distribute.
Chop the remaining ingredients and add them to the carrots and toss to combine. Save a little of each to sprinkle on top as garnish.
Feel free to shred the carrots if you want them in shorter pieces. You can add different nuts or dried fruits like walnuts, pecans, figs or raisins. Also try chives or cilantro.
