fattoush salad is so simple yet indescribably more exciting and flavorful than other salads!
Honestly, I don’t know what it is about Fattoush!? But whenever someone makes it or I see it at a restaurant, I get super excited! I mean there’s nothing crazy or complicated about it. Still somehow, it manages to hit all the right notes!
I have to be fair. I guess it’s not thee most basic and simple salad, but it’s pretty darn close, so you have to try it so you can be as hooked as Nadia and I are! So let’s see what I would say is not so simple….purslane (pic above) and toasted pita chips. I know, I know! Not that crazy. But again, something about it is just sooooo good! Go ahead, see for yourself;-)
This salad is so simple yet nothing like your ordinary daily salad...give it a try!
- 6 romaine lettuce stalks, chopped
- 1 1/2 cups purslane
- 3 Persian cucumbers, chopped
- 3 Roma tomatoes, chopped
- ¼ green onions, chopped
- ½ red onion, thinly sliced
- 1 cup pita chips, toasted
- ¼ cup olive oil
- ¼ cup red wine vinegar
- ½ tsp pomegranate molasses
- 2 garlic cloves, pressed
- ½ tsp salt
- ½ tsp dried mint
In a medium sized bowl, toss to combine all salad ingredients.
In a small bowl, whisk or stir all the ingredients until they are well combined.
For the pita chips, you can either cheat and use store bought broken into small pieces, or you can cut pita bread into diamond shapes and bake them or more traditionally, flash fry them til they're golden brown! This is a traditional recipe. Feel free to have some fun and add some of your favorite salad ingredients like nuts, dried fruits or cheese to make it your own!
