Zaatar Vinaigrette is a super simple way to dress up your salad!
Zaatar is a Middle Eastern spice blend consisting of thyme, sumac, sesame and other that is one of those things where every family has their own famous blend and also every family has the one shop they swear by. Blends vary by region for example in Lebanon they use more sumac so its tangier and a little more on the red side.
Bakeries throughout the Middle East make “manaeesh” using zaatar. Fresh bread baked with olive oil and zaatar sprinkled atop. In my family a breakfast is not complete without a bowl of olive oil and another bowl of zaatar with a plate of fresh bread and fresh cucumber. First you take the bread, dip in the olive oil, dip in the zaatar, put it in your mouth, and take a bite of cucumber then a sip of hot tea. That’s how zaatar is supposed to be eaten, at least in my household. So this salad is not that far fetched from the way its traditionally eaten. I also have a great zaatar chicken recipe posted here.
It used to be quite challenging to find a supermarket that carries zaatar, good ones at least. For a while we would only eat zaatar when we were visiting Syria but luckily now it is a lot more readily available.
For the salad, Deana and I cut up tomatoes, cucumber and purple onion. You can add a combination of any crunchy vegetables because the dressing has such a great kick to it you don’t need much more to make it a winner.
Super simple way to elevate your salad!
- 2 T olive oil
- 1/4 tsp Dijon
- 1 T + 1 tsp lemon
- 1/4 tsp honey
- 1 1/2 tsp zaatar
- salt to taste
Mix all ingredients together
