Zaatar Spiced Pomegranate Pistachio Stuffing adds a wonderful new flare to an age old Thanksgiving staple that you’re sure to love!
Thanksgiving, hands down one of my favorite holidays on the planet! I’m a little sad as I write this, as we once had this amazing tradition where all our dearest friends and family would come every year and we would have eating competitions, play games and catch up after life got so busy we couldn’t see each other as often as we used to. But everyone was always there for that day, whether it was by plane, train or automobile.
My house was that perfect place for it. Everyone would gather in the kitchen as my mom poured mugs of cider, the dads all wore funny aprons, rolled up their sleeves and started carving the turkey together. We would then divide into two tables, the parents and kids. Mind you the youngest of us was like 30, but hey, we’re still kids to our parents right??
Anyway, the food was always amazing! Even though we’re Syrian, my mom knew how to throw down one amazingly American Thanksgiving meal! For most of the crew, we were never the biggest fans of the turkey, but boy did we love those sides! And which better to start off with than stuffing! It’s so classic and so good! You can pretty much throw any combination of nuts, fruits, and meat in there and you’ll have a winner!
This year I had some fun with it and added some new things to our classic, like zaatar, pomegranate seeds and pistachios. It has great flavor! We really enjoyed it and we hope you do too;-)
A wonderful twist on a Thanksgiving classic!
- 12oz bag cubed stuffing (I used herb seasoned)
- 5 tbsp butter, salted
- 1 large onion, yellow
- 2 celery stalks
- 2 1/2 cups chicken broth
- 3/4 cup pomegranate seeds
- 1/2 cup pistachio pieces
- 1 tbsp zaatar
In a large saucepan, heat the butter and cook onion and celery until they are tender but still crisp. Add broth to the pot and bring to a boil. Remove from heat and then gently stir in the cubed stuffing until it is all moistened by the broth.
Sprinkle on the pomegranate seeds, pistachios and zaatar and mix lightly. Transfer to a casserole and bake at 350 degrees for about 20 min or until the stuffing becomes golden brown, stirring half way through to bake evenly.
I also love to add little beef or turkey mini sausages that you can find in the refrigerator section at the grocery story. Chop them up into small pieces and sauté them til they get crisp and browned and stir them in. Chestnuts are also delicious!
