So this is kind of a fun story….I mean, at least I think it is. I found my now friend Ahlam, of the blog Straight Up Bananas, on Instagram. She lives all the way in Dubai. But, as luck would have it, I was going to Dubai! Perfect! I would reach out to her and see if we could meet up while I was there. She turned out to be the sweetest person! What was supposed to be a simple meeting for chocolates and coffee, at Mirzam, this adorable chocolate factory she recommended, ended up being an entire day into night hang out!
We had so much fun! It was as if we had known each other for years. So we talked about our families, life, travel and of course food! As I mentioned above, she has this wonderful blog Straight Up Bananas. She has lots of great healthy recipes that are delicious and easy to make. I’m all about that life, so since I’m a big fan of carrying healthy on-the-go style, protein filled snacks, this was a perfect way to go!
Nadia and I took a road trip with her sisters to Santa Barbara recently, and what better to bring as an in the car snack….easy healthy vegan fudge squares!! Of course, I whipped up a batch real quick before we left and they were so yummy! Also, super easy to make because there is so much flexibility in the recipe. Plus, exact measurements aren’t necessary at all and you can substitute so many ingredients for whatever you have on hand. The convenience is so great and they’re so good!

Quick, easy and delicious, healthy protein filled snacks that are no bake and can be made whipped up in minutes!
- 8 ounces dates, or date paste
- 1 handful toasted coconut, or shredded
- 1 handful granola, or rolled oats
- 1 handful goji berries, or dried cranberries
- 1 handful banana chips
- 1 tbsp tahini
- 1 tbsp almond butter
- 3 tablespoons peanut butter
- 1 pinch sea salt
- 2 teaspoons coconut oil, melted
- 2 teaspoons carob powder, or cocoa powder
Place all ingredients into a food processor and blend together until they start to form a big ball. You want to be able to roll the ingredients into a ball with your hands and have it stay together.
In a parchment lined 8x8 inch square pan, place the ingredients and press down firmly until they are evenly spread in the pan. Place in the refrigerator for about 20 min. Take out and cut into squares and enjoy! They can be kept covered in the fridge for a very long time!
Feel free to substitute what you have on hand. If you don't have almond butter, use another nut butter or more peanut butter. If you don't have goji, use cranberry like I did. I also added pumpkin seeds and more shredded coconut as a topping.
