So anyone who knows me knows I love to carry healthy snacks with me wherever I go…car…plane…purse every day, there’s no stopping me! Why you may ask!? I have this unusual fear of getting hungry while out and not having an easy healthy option to hold me over. Plus, I’m not very pleasant when I get hangry!
Since I’m getting a little older, or maybe just more diet saavy (that makes me feel better), I’ve been heavy into homemade snacks like these bites! They all start with a super delicious date base by Natural Delights! They’re so easy to make and the variety of flavors you can create is really endless thanks to our potassium, vitamin and mineral rich superfood friends, Medjool dates! Not to mention, these balls are gluten-free, vegan, and can easily be paleo. So everyone wins!
Another thing I’m very obsessed with is peanut butter. God why is it SO good! I mean I’m one of those eat it out of the jar with a spoon people! That’s why my go to flavor is always something with peanut butter included! And who doesn’t love chocolate!? Done and done!
So these are pretty amazing as a pre or post-workout snack, or any on the go situation. Roll them in coconut, ground nuts or your favorite seeds. Substitute nuts and nut butters. Get creative and enjoy!
The easy, healthy on the go snack that's delicious and satisfying!
- 10 Medjool dates, pitted
- 1/2 cup peanut butter 1/4 for softer flavor
- 1/4 cup almonds
- 1/4 cup walnuts
- 2 tbsp cocoa powder, unsweetened
- 1/2-1 tsp pure vanilla extract optional
- 1 pinch salt optional
Place all ingredients together in a food processor and process for about 1 min or until it reaches the desired consistency. Process less for a more chunky bite, more for a more pasty bite.
Roll the balls in shredded unsweetened coconut, ground nuts or seeds! Make all the substitutions your heart desires!
