Easy and delicious lentil soup- the Deana edition, is a basic, yummy, super hearty soup that you’ll want to eat as a meal!
I am VERY passionate about lentil soup! I make it all the time and I LOVE it!! Can’t you feel my enthusiasm;-) The best part is that it’s so easy to make and has such great flavor!
Growing up, my mom used to make it for us all the time. I never paid attention to how she made it, I just knew that my dad and I would be in a competition as to who would get the last bowl from a pot that was really too big to feed the three of us!
So, as I went on my own and learned how simple it was to make, it popped right back into my life on heavy rotation! Lentils are great for lowering cholesterol, heart and digestive health, stabilizing blood sugar and are packed with protein, vitamins and minerals. Plus, the great thing is it basically requires no prep and you can just leave it to do its own magic!
If you’re like me, a big bowl of this can easily be lunch or the perfect side at dinner. Either way, try it and thank me because it’s so good!

This soup is delicious, healthy, easy to make & can totally act like a meal!
- 10 cups water
- 1 16oz bag red lentils
- 2 tbsp olive oil
- 3 cloves garlic, pressed
- 1 large yellow onion, quartered any will do
- 1 tsp cumin, ground or to taste
- salt & pepper to taste
- lemon juice, fresh optional, to taste
In a large pot, bring 10 cups of water to a boil and pour in remaining ingredients (you want to start with the water about an inch above the ingredients). Allow to simmer for 30 min. stirring occasionally and adding more water as it thickens and reduces. The soup is quite thick so you will need to add a few more cups of water as it cooks. When the onion turns clear and begins to fall apart and lentils are very tender, you can stop cooking and allow the soup to cool a bit. Then add to a blender and process until smooth.
You don't have to blend the soup. If you like a thicker, heartier consistency, leave it as is. I personally LOVE lemon juice with this soup and could not imagine eating it without it! Cook time also varies, so if after 30 min. you still feel its not ready wait another 10-15.
