Iftar table 2017 for Ramadan that Deana and I worked on will get you ready and excited for Ramadan!
Whose hungry, pun intended. Ramadan is one of my favorite times of year. It’s literally all centered around food and thats basically what I live for. A few weeks ago, I asked friends from different backgrounds what is a staple dish on their Ramadan table and a lot of people had a hard time naming one particular entree. Everyone agreed Ramadan tables were all about the appetizers, the soups and the salads. After not eating for hours no one wants to eat just one main meal, they want to eat everything and anything. Which is why appetizers are so great.
Every family has their non negotiable for their Ramadan table and for our home its what we call “tisiyea” which some call “fetteh” which is basically garbanzo beans in a yogurt tahini sauce with layers of pita bread topped with toasted pine nuts and pomegranate. It’s basically the best thing that every existed.
It’s always the last dish that is placed on the table because the pine nuts are toasted with ghee and as soon as they are sizziling and toasty they are topped on the dish and the dish is served to be consumed immediately.
Fattoush is another great salad that we usually serve during Ramadan. It pairs well with most dishes and is a great way to get some greens in.
Samoas, Fatayir, Kibbeh, are almost always on every Ramadan iftar i’ve been invited to. *iftar means to break fast so that is what the dinner is called at sunset during Ramadan.
The good news about tons and tons of appetizers is a lot of them can be prepared before hand or they are not that time consuming to prepare. Dips are great for that reason. We served Muhammara, obviously we used www.sweetpillar.com Muhammara so that definitely saved some time. We also made avocado hummus which took a total of several minutes. That can be made before hand and stored nicely in the fridge. We made cheese barak, another item that can be made ahead of time and put in the freezer. When you do need them just pop them in the oven!
And of course, you cannot forget dates. They are a must on every single Ramadan table as it is customary to break fast with a date. My favorite are medjool dates because they are so sweet and chewy like a natural taffy.
