Muhammara Chicken

Ingredients

  • 1 tablespoon vegetable oil (or oil of choice)
  • 1/2 onion sliced
  • 2 garlic cloves crushed
  • 1 lb chicken thigh
  • 1 8 oz can of tomato sauce
  • 3 tablespoons of Muhammara
  • 1/2 cup water
  • 1 cup diced sweet potatoes
  • 1/4 cup chopped cilantro
  • 5 medjool dates pitted and sliced
  • Salt & Pepper to taste

Instructions

  1. Sautee sliced onions and crushed garlic in 1 tablespoon of oil (I used vegetable oil) until lightly browned 2-3 minutes
  2. Remove onion and garlic
  3. Add chicken, salt & pepper and light brown on both sides 6-7 minutes
  4. Add browned onions and garlic back to pot
  5. Add sweet potatoes and stir for 1 minute
  6. Add 1 can of tomato sauce, 3 heaping tablespoons of muhammara, 1/2 cup water
  7. Stir and cover on low heat for 13 minutes
  8. Add cilantro and dates and stir
  9. Cover for another 4 minutes
  10. Garnish with cilantro and serve with rice
