Mjaddara Rice & Lentils with Caramelized Onions

Ingredients

MJADDARA

  • 2 onions sliced
  • 1/2 onion diced
  • 1 cup rice
  • 1/2 cup lentils
  • 2 cups chicken stock
  • 1 tbsp ground cumin
  • 3 tbsp olive oil
  • 1 tbsp vegetable oil
  • salt & pepper

TOMATO SAUCE

  • 1/4 chopped onion
  • 2 garlic cloves minced
  • 5 tomatoes chopped
  • 2 cups chicken stock
  • 1 tbsp tomato paste
  • 1 tbsp olive oil

Instructions

MJADDARA

  1. Add the oils to a saucepan and immediately add sliced onions before oil heats
  2. Leave on low heat until onion begins to brown (15-20 mins)
  3. In separate medium pan lightly sauté lentils with diced onion (1-2 minutes)
  4. Add 1 cup chicken stock
  5. Cover and lower heat to medium for 10-15 minutes until lentils are soft
  6. Add rice
  7. Add remaining chicken stock
  8. Add reserved oil from the caramelized onion
  9. Add cumin, salt and pepper
  10. Bring chicken stock to boil
  11. Reduce heat to low and cover for 15 minutes
  12. Let it sit for 5 additional minutes covered off heat
  13. Top with onions and serve with tomato sauce

TOMATO SAUCE

  1. Sautee onions and garlic in oil over medium heat
  2. Add tomatoes and sauté for a few more minutes
  3. Add chicken stock and bring to a boil
  4. Cover and lower heat to medium for 5-10 minutes (until tomato is soft)
  5. Add tomato paste and stir
  6. Cover and continue to let the flavors immerse in each other 5-7 minutes
  7. Use a handmixer to mix if you prefer it to be smoother
  8. Serve with Mujaddara
