Medjool Date Chocolate Peanut Butter Energy Balls

Ingredients

  • 10 Medjool dates, pitted
  • 1/2 cup peanut butter 1/4 for softer flavor
  • 1/4 cup almonds
  • 1/4 cup walnuts
  • 2 tbsp cocoa powder, unsweetened
  • 1/2-1 tsp pure vanilla extract optional
  • 1 pinch salt optional

Instructions

  1. Place all ingredients together in a food processor and process for about 1 min or until it reaches the desired consistency. Process less for a more chunky bite, more for a more pasty bite.

Recipe Notes

Roll the balls in shredded unsweetened coconut, ground nuts or seeds! Make all the substitutions your heart desires!
