Ingredients

  • 4 small potatoes (even in size)
  • 2 tbsp ghee
  • 2 tsp zaatar (extra for topping)
  • salt & pepper to taste
  • chives (for topping)

Instructions

  1. Preheat oven to 350 degrees F.  Begin at the very front of the potato and cut a slice into it, stopping a little bit before going through. Repeat the slicing process as close together as you can without cutting off a slice or cutting all the way through the potato. (You can go back later and deepen cuts after you finish the whole process and this will allow the potato layers to open up more). Repeat on all potatoes.

  2. Sprinkle salt and pepper into the slices. Then mix together ghee and zaatar and with a spoon, drizzle all into slices. Bake potatoes for 20-30 min until potatoes are tender and cooked through. Top potatoes with extra zaatar and chives.

Recipe Notes

Feel free to add additional toppings. Check the slices by poking with a sharp knife to see if they're cooked through.
