Ingredients

  • 1 pound carrots, sliced in ribbons (about 4-6)
  • 2 tbsp tahini
  • 1 tbsp honey
  • 2 tbsp lemon juice, fresh
  • 2 tsp olive oil
  • 1/2 tsp water (add more if needed to thin)
  • 1/2 cup parsley, chopped
  • 1/2 cup green onion, chopped
  • 1/4 cup pistachio, finely chopped or ground
  • 1/4 cup dates, chopped

Instructions

  1. Peel carrots with a carrot peeler. In a large bowl, continue to run the peeler along the length of the carrot as if to continue peeling, in order to create strips/ribbons of carrot. Do this until until you reach the center of the carrot and can no longer run the peeler. Leave center part of carrot aside or eat.

  2. Combine tahini, honey, lemon, olive oil and water in a small bowl and mix well. Add enough water so that the dressing is still on the thicker side, but is pourable.

  3. Pour dressing over carrot ribbons and toss to evenly distribute.

  4. Chop the remaining ingredients and add them to the carrots and toss to combine. Save a little of each to sprinkle on top as garnish.

Recipe Notes

Feel free to shred the carrots if you want them in shorter pieces. You can add different nuts or dried fruits like walnuts, pecans, figs or raisins. Also try chives or cilantro.
