Barasia- leek & carrot saute is a light and fresh vegetable medley that's a one pan wonder and only requires two main ingredients! But from the taste you would never know!
In a large skillet over medium heat, pour olive oil. Allow to heat for a minute, then add carrots. Cook for about 5 min. Then add leeks and cook another 5 min. Add the vinegar, salt and lemon (is using). Cover and let cook together for another 5-10 min or until veggies are tender.
You can add more or less vinegar if you like. You can also leave it out altogether, but it really makes the dish shine.
