Easy Healthy Vegan Fudge Sqaures

Quick, easy and delicious, healthy protein filled snacks that are no bake and can be made whipped up in minutes!

Ingredients

  • 8 ounces dates, or date paste
  • 1 handful toasted coconut, or shredded
  • 1 handful granola, or rolled oats
  • 1 handful goji berries, or dried cranberries
  • 1 handful banana chips
  • 1 tbsp tahini
  • 1 tbsp almond butter
  • 3 tablespoons peanut butter
  • 1 pinch sea salt
  • 2 teaspoons coconut oil, melted
  • 2 teaspoons carob powder, or cocoa powder

Instructions

  1. Place all ingredients into a food processor and blend together until they start to form a big ball. You want to be able to roll the ingredients into a ball with your hands and have it stay together.

  2. In a parchment lined 8x8 inch square pan, place the ingredients and press down firmly until they are evenly spread in the pan. Place in the refrigerator for about 20 min. Take out and cut into squares and enjoy! They can be kept covered in the fridge for a very long time!

Recipe Notes

Feel free to substitute what you have on hand. If you don't have almond butter, use another nut butter or more peanut butter. If you don't have goji, use cranberry like I did. I also added pumpkin seeds and more shredded coconut as a topping.
