Cauliflower Stew

Ingredients

  • 1 lb ground beef
  • 1/2 head of cauliflower
  • 1 tablespoon olive oil
  • 1 small onion diced
  • 1 tablespoon ground cumin
  • 2 cups chicken stock
  • 1/4 cup chopped cilantro
  • 4 crushed garlic
  • salt and pepper

Instructions

INSTRUCTIONS:

  1. Sautee cauliflower in olive oil for a few minutes or until slightly brown (this is an optional step but I think it gives it some more flavor and looks more appealing than a bare white cauliflower)
  2. Set cauliflower aside
  3. brown the beef, onions and salt and pepper
  4. add the cauliflower, chicken stock, and cumin
  5. cover on low for 5-10 minutes (until the cauliflower is tender but not too soft)
  6. add the cilantro and garlic in the end
  7. cover again for another few minutes
  8. serve with lemon wedges, white rice and/or pita bread
