Green Beans in Tomato Onion Stew

Ingredients

  • 1 medium onion diced
  • 1 lb fresh green beans
  • 1 tablespoon olive oil
  • 1 medium tomato diced
  • salt
  • 1/4 cup chicken stock (optional)
  • 1/4 cup tomato sauce
  • 1 tablespoon tomato paste
  • 4 garlic cloves crushed

Instructions

  1. Add onions to olive oil in pan while olive oil is still cold
  2. Sauté for a few minutes on low med heat
  3. Add green beans and cover on med heat for a few minutes

  4. Add tomato and salt
  5. Cover until green beans are semi soft
  6. Add chicken stock, tomato sauce and tomato paste
  7. Cover for another 7-8 minutes on low heat
  8. Add garlic at the end and cover for a few more minutes
