Ingredients

  • 6 chicken thighs bone in skin on
  • 2 Tablespoons zaatar
  • 3 Tablespoons olive oil
  • 2 Tablespoons lemon juice
  • 1/2 cup chicken stock
  • 1/2 cup diced potatoes
  • Salt & Pepper

Instructions

  1. Preheat oven to 400 degrees

  2. Clean chicken
  3. Rub chicken, zaatar, lemon, potatoes, salt and pepper together (you can also place them all in a large zip lock bag and shake)

  4. Place in 9x9 pyrex
  5. Evenly distribute chicken stock over chicken
  6. Cover and put in the oven for 45 minutes
  7. Uncover for 5 minutes to brown the top
  8. Serve with couscous, rice, or on its own!
