Zaatar Avocado Toast with Flower Eggs

A fun, herby twist on traditional avocado toast!

Ingredients

  • 3-4 Avocados (depending on the size of the avocado, a half of a small one with be good for 1 toast)
  • 1/4 Red Onion minced
  • 1-2 Lemons juiced (alter this depending on how tangy you like it)
  • Olive Oil (to drizzle)
  • 1-2 tbsp Zaatar (use more or less depending on how much herby flavor you like)
  • 4 Eggs
  • 4 slices Whole grain toast
  • Salt & pepper to taste

Instructions

  1. Begin by peeling your avocados and placing them in a medium sized bowl and mash with a fork until you get a creamy but chunky consistency

  2. Mince your red onion and add to the avocado

  3. Add lemon juice and salt and pepper to taste.

  4. You can toast your bread or leave it un-toasted. Then spread your avocado mixture on each slice, drizzle olive oil and sprinkle generously with Zaatar.

  5. Spray a medium sized frying pan with cooking spray, lay a cookie cutter on the pan (also spray that with cooking spray) and crack your eggs, one in each cutter, and wait about 5 min or so or until it cooks through where the white is done, but the yolk is soft. 

  6. Finally, take a spatula and scoop up the cookie cutter. Release the egg onto the spatula and slide on to your toast. Viola!
