Sweet Pea & Mint Tartine

Light, Fresh and flavorful! Makes for the perfect summertime snack!

Ingredients

  • 1 16oz bag frozen green peas
  • 1/2 cup mint, fresh, roughly chopped 1 cup if you prefer extra minty flavor
  • 2 tbsp olive oil
  • 2 tbsp parmesan
  • 2 tbsp lemon juice, fresh
  • salt & pepper to taste

Instructions

  1. Let frozen peas thaw. Then add olive oil and mint and blend a little bit. Then add all ingredients and blend until a thick chunky mixture forms. You will need to use a spoon to keep pushing down the mixture as it's not very liquid. If it becomes too dry add a tablespoon or two of water.

Feel free to add a dollop of yogurt, ricotta cheese or pickled onions!
