Light, Fresh and flavorful! Makes for the perfect summertime snack!
Let frozen peas thaw. Then add olive oil and mint and blend a little bit. Then add all ingredients and blend until a thick chunky mixture forms. You will need to use a spoon to keep pushing down the mixture as it's not very liquid. If it becomes too dry add a tablespoon or two of water.
Feel free to add a dollop of yogurt, ricotta cheese or pickled onions!
