Pomegranate Maple Sweet Potato Mash

This creamy, sweet potato mash will be a welcomed edition to the regular savory sides, with a hint of pomegranate to add unique flavor!

Ingredients

  • 2 large sweet potatoes OR yams
  • 1/4 cup butter, unsalted, melted
  • 4 tbsp maple syrup, natural
  • 1 tbsp pomegranate molasses
  • 1/2 tsp salt
  • pomegranate & pumpkin seeds (for garnish)

Instructions

  1. Chop sweet potatoes/yams into chunks. Drop them into a large pot of boiling water and cook for about 20 min or until they are very tender. Drain the potatoes and begin to mash with fork or potato masher. Add in remaining ingredients and stir until fully combined. Transfer to serving dish and top with pomegranate and pumpkin seeds!

Recipe Notes

Feel free to adjust the amount of maple syrup and pomegranate molasses to suit your taste. Same goes for the salt. Also, feel free to top with pecans or any other nuts or seeds of your choice!
