Mamounieh- Toasted Semolina Pudding with Pine nuts & cinnamon is a sweet and delicious way to start your morning or as a dessert any time! It can be eaten hot or cold and is ready in a matter of minutes!
In one medium saucepan, add sugar and water over medium-high heat. Stir and let it begin to boil. Lower heat to keep it at a simmer. At the same time in another medium saucepan, add ghee and semolina over medium-high heat and stir constantly with a wooden spoon to toast the semolina. Once it starts to turn golden and a delicious aroma begins, you have toasted it enough, about 3-5 minutes.
Now that the sugar water is simmering and ready, slowly add the toasted semolina to the sugar water saucepan, stirring constantly. Allow it to simmer for about a minute. Then turn off the heat.
Immediately pour the Mamounieh into small bowls or ramekins, top with sizzling pine nuts and a couple dashes of cinnamon. Serve hot or cold!
If you don't have semolina, you can use cream of wheat or farina brands. You can also add different nuts if you don't have pine nuts on hand. Cook the nuts in some ghee or regular butter until golden brown. Then spoon the nuts and butter over each bowl.
