Cilantro Skillet Potatoes

This simple flavorful potato dish is no standard potato salad! Whip it up in minutes!

Ingredients

  • 5 small potatoes, chopped thinly
  • 1/4 cup olive oil (or enough to coat pan)
  • 1 cup cilantro, chopped
  • 1/2 tsp salt
  • pepper to taste

Instructions

  1. In a medium skillet over medium-high heat, add olive oil, potatoes and salt. Cook until tender about 10 minutes.

  2. About 8 minutes into cooking, where the potatoes are almost tender, add in cilantro and a dash of pepper, Stir constantly so the cilantro cooks a bit to soften but stays bright in color.

Make this your own and add different herbs or veggies like parsley, or a squeeze of lemon juice!
