Easy & Delicious Lentil Soup- The Deana Edition

This soup is delicious, healthy, easy to make & can totally act like a meal!

Ingredients

  • 10 cups water
  • 1 16oz bag red lentils
  • 2 tbsp olive oil
  • 3 cloves garlic, pressed
  • 1 large yellow onion, quartered any will do
  • 1 tsp cumin, ground or to taste
  • salt & pepper to taste
  • lemon juice, fresh optional, to taste

Instructions

  1. In a large pot, bring 10 cups of water to a boil and pour in remaining ingredients (you want to start with the water about an inch above the ingredients). Allow to simmer for 30 min. stirring occasionally and adding more water as it thickens and reduces. The soup is quite thick so you will need to add a few more cups of water as it cooks. When the onion turns clear and begins to fall apart and lentils are very tender, you can stop cooking and allow the soup to cool a bit. Then add to a blender and process until smooth. 

Recipe Notes

You don't have to blend the soup. If you like a thicker, heartier consistency, leave it as is. I personally LOVE lemon juice with this soup and could not imagine eating it without it! Cook time also varies, so if after 30 min. you still feel its not ready wait another 10-15.
