Pumpkin Hummus

The ever so popular classic gets a fall makeover to celebrate Pumpkin Season!

Ingredients

  • 15 ounce chickpeas, canned (reserve 1/4 cup garnish)
  • 2/3 cup pumpkin puree, canned
  • 1/4 cup tahini
  • 3 tbsp lemon juice, fresh
  • 1 clove garlic, pressed
  • 1/2 tsp salt

Instructions

  1. In a blender or food processor, blend together all the ingredients except lemon juice. It will be dry and you will need to move it around with a spoon, add lemon juice to give you a little liquid to get things moving again. Add garlic and salt and blend until combined. Top with some chickpeas and olive oil and enjoy!
