Zaatar Spiced Pomegranate Pistachio Stuffing

A wonderful twist on a Thanksgiving classic!

Ingredients

  • 12oz bag cubed stuffing (I used herb seasoned)
  • 5 tbsp butter, salted
  • 1 large onion, yellow
  • 2 celery stalks
  • 2 1/2 cups chicken broth
  • 3/4 cup pomegranate seeds
  • 1/2 cup pistachio pieces
  • 1 tbsp zaatar

Instructions

  1. In a large saucepan, heat the butter and cook onion and celery until they are tender but still crisp. Add broth to the pot and bring to a boil. Remove from heat and then gently stir in the cubed stuffing until it is all moistened by the broth.

  2. Sprinkle on the pomegranate seeds, pistachios and zaatar and mix lightly. Transfer to a casserole and bake at 350 degrees for about 20 min or until the stuffing becomes golden brown, stirring half way through to bake evenly.

Recipe Notes

I also love to add little beef or turkey mini sausages that you can find in the refrigerator section at the grocery story. Chop them up into small pieces and sauté them til they get crisp and browned and stir them in. Chestnuts are also delicious!
