Middle Eastern Style Guacamole

This guacamole dip is a new twist on the traditional recipe! It adds a fun new hint of flavor and a bit of crunch to liven things up!

Ingredients

  • 2 avocados, ripe
  • 1/4 + 2 cup + tbsp lemon juice, fresh
  • 1 tsp pomegranate molasses (optional, see notes)
  • 1/4 cup red onion, diced
  • 1/4 cup parsley, chopped (reserve 1 tbsp for garnish)
  • 1/2 tsp salt
  • 2 dashes cumin
  • 1/4 cup pumpkin seeds, or any seed (optional for crunch)
  • 1/4 cup pomegranate seeds (optional for crunch)
  • sumac (optional for garnish)

Instructions

  1. In a bowl, peel and pit avocado. Mash slightly (so as you add liquid ingredients the dip won't get too watery from over-mixing). Add lemon juice and pomegranate molasses, if using. Mix together until combined well. Stir in remaining ingredients and top with reserved parsley and sumac as garnish. 

Recipe Notes

The pomegranate molasses add an interesting tangy flavor to the recipe, but it does deepen the bright green color of the avocado. So, if you want it to be bright green, then add less molasses or leave it out altogether. Also feel free to substitute any seeds you'd like or leave them out too;-)
