Zaatar Hasselback Potatoes look fancy and fabulous! But with only 3 ingredients, they’re seasoned, buttery and super quick & easy to make!
I always love seeing hasselback potatoes. All the thin slices that make the potato look almost like a work of art! Like an accordion potato!….Ok, lemme stop. But those slices aren’t just for looks you know! You can stuff things with all kinds of goodies! The options are endless and that’s where it’s fun! Cheese, spices, herbs, you name it! So the dryness that can sometimes bring a potato down, is no longer an issue because each bite gets toppings!! Woohoo!

Since I love zaatar so much, AND I’ve been on this ongoing ghee kick, I decided to make those my toppings for this lovely side dish! Ghee has all these amazing health benefits and has no dairy. So it’s great for people with food allergies and it also packs a bunch of vitamins and minerals and even has a really high smoke point so it’s great for all kinds of cooking! Let’s also not forget about it’s incredibly strong buttery taste! If you like the taste of butter….this is butter on double time! Don’t worry zaatar, no one can forget about you! Tangy thyme with sesame seeds. It gives this unique tangy, herby, buttery flavor I just love!

So if you’re looking for a new way to get potatoes on the menu that’s beautiful looking and delicious, I highly recommend you try hasselback style potatoes! The zaatar and ghee are awesome too, but that’s just one of an endless array of topping options! Have fun with it and slice carefully! It’s definitely a little tricky to get those slices super thin. I recommend using a really sharp, sturdy knife and practice on a tester potato til you get the hang of it;-)

Thinly slicing potatoes makes for an amazing space to add delicious toppings! And they look great too!
- 4 small potatoes (even in size)
- 2 tbsp ghee
- 2 tsp zaatar (extra for topping)
- salt & pepper to taste
- chives (for topping)
Preheat oven to 350 degrees F. Begin at the very front of the potato and cut a slice into it, stopping a little bit before going through. Repeat the slicing process as close together as you can without cutting off a slice or cutting all the way through the potato. (You can go back later and deepen cuts after you finish the whole process and this will allow the potato layers to open up more). Repeat on all potatoes.
Sprinkle salt and pepper into the slices. Then mix together ghee and zaatar and with a spoon, drizzle all into slices. Bake potatoes for 20-30 min until potatoes are tender and cooked through. Top potatoes with extra zaatar and chives.
Feel free to add additional toppings. Check the slices by poking with a sharp knife to see if they're cooked through.
