peach & date honey biscuits are everything a dessert should be, crispy, chewy, creamy and fresh!
So Nadia and I are out here really embracing our seasonal produce! It’s what every good Californian does right!? Since it’s summertime, it’s clearly peach season! And my God have they been delicious! And not to constantly harp on dates, since they are a super fruit, but Bard Valley Natural Delights dates are always amazing and always in season!!
As a result of all that sweet fleshy goodness, we decided to make a very quick and simple, but ever so delicious dessert option incorporating this summer superstar and our tried and true! Sometimes you just want to whip up something that will fulfill that sweet tooth without setting you back 600 calories or 2 hours of prep.
Now I personally love the savory sweet combo. I understand that we’re not all on the same page here, but stick with me! This one isn’t a dramatic salty to sweet ratio, I promise! To save time and energy, we used refrigerated flaky biscuits. Then topped them with plain, non-fat Greek yogurt, honey, peach slices and Natural Delights date slices! See! So simple! And really yummy!! Plus, it’s actually pretty healthy considering I only used half a biscuit per serving!
Obviously you can also substitute the yogurt for different cheeses like ricotta or mascarpone! And different fruit toppings as the seasons change…Let us know what you think!
This light, fruity, healthyish dessert can be whipped up in a matter of minutes!
- 1 package refrigerated flaky biscuits
- 1 5 ounce plain Greek yogurt
- 1 tbsp honey plus more for drizzling
- 2-3 peaches sliced
- 2 Natural Delights dates sliced
Bake biscuits according to package directions.
In a small bowl, mix together yogurt and honey.
When biscuits are finished, allow them to cool for a few minutes. Then separate them into halves.
Add a large dollop off yogurt to each biscuit then drizzle all over with some more honey.
Top with sliced peaches and sliced Natural Delights dates.
You will have a lot of extra biscuits. You can double/triple your yogurt recipe and make them all or eat them as is! Also, the yogurt can get very soft, so if you prefer a firmer consistency, try using ricotta cheese instead!
